Mama’s Pimento Cheese


Hillsborough, N.C. writer Lee Smith has a new memoir out, “Dimestore.” We wrote a short profile of Smith and her experience writing about her own life instead of fiction in this March 2016 story: “A life spent developing character,” by Mary Miller. Then Smith agreed to let us reprint the essay in her book about her mother’s recipe box.  She also shared her mother’s recipe for pimento cheese. We found Durkee Famous Sauce at Carlie C’s in Garner, N.C.

1 teaspoon yellow or Dijon mustard

1 (4-ounce) chopped pimientos, drained

1/4 teaspoon cayenne pepper

1/2 cup mayonnaise

1/4 cup Durkee Famous Sauce

2 garlic cloves, minced

1 pound shredded cheddar cheese

Mix together all ingredients.

Yield: about 4 cups
